Our Super Seed Seaweed & Black Sesame Crackers provide a crisply savory springboard for these unequivocally umami Miso Maple Tofu Bites.


14 oz extra firm tofu
1 tbsp vegetable oil
1 tbsp and 1 tsp cornstarch
1 tsp garlic powder
1 tbsp red or white miso paste
2-3 tbsp water
¼ cup soy sauce
2 tbsp maple syrup
1 tsp sesame oil
2 tbsp rice vinegar
1 tbsp minced garlic
1 tbsp minced ginger
1 tsp sriracha
1 scallion, chopped

Preheat oven to 400 degrees. Drain and press the tofu to get the moisture out, then cut into cubes. In a large bowl, toss the tofu cubes with the vegetable oil, garlic powder, a pinch of salt and 1 tablespoon of cornstarch. Place the coated tofu on a lined baking sheet. Bake for 30 minutes until crispy and golden brown. While the tofu is baking, prepare the marinade. In a small bowl, mix the miso paste with 2-3 tablespoons of water until it dissolves. Then add in the soy sauce, maple syrup, sesame oil, rice vinegar, garlic, ginger, sriracha and 1 teaspoon of cornstarch. Mix well. Add mixture to a pan over medium heat. Stir constantly for 1-2 minutes or until the mixture thickens. Add the baked tofu to the pan, and stir until the sauce is sticky. The tofu should end up completely coated. Serve on Super Seed Seaweed & Black Sesame Crackers with the chopped scallion sprinkled on top.
